Ricotta Pancakes

Today I couldn´t help myself and I had pancakes for breakfast. First of all it is not a usual breakfast dish in Austria but I love it since my time in New York City.

I decided to follow along an easy recipe by Nigella Lawson. Thanks to the added ricotta the pancakes smell and taste like summer. It´s heaven.

I love to add some fresh berries and lavender syrup in summer but I also tried a banana chocolate chip version with greek yogurt on the side. The perfect way to start a Sunday, don´t you think?!

Here´s the original recipe:

x 250g ricotta cheese
x 125ml semi-skimmed milk (or whole milk)
x 2 large eggs, separated
x 100g plain flour (I only use speltflour)
x 1 teaspoon baking powder
x pinch salt
x 2 tablespoons groundnut oil

Makes around 25 pancakes

To serve: fresh berries chopped or other fruit of your choice (topped with greek yogurt, syrup or cream)

1. Put the ricotta, milk and egg yolks into a bowl, mix well. Stir in the flour, baking powder and salt, whisk to make a smooth batter.
Beat the egg whites until they become foamy and then add to the ricotta mixture.

2. Heat the oil in a frying pan and put in little dessertspoons of the batter.

3. Cook the pancakes for about 1 minute until golden and then flip them over for another minute. Keep the cooked pancakes warm.

Be creative and add chocolate chips or coconut flakes as you like! Enjoy :)
